Bimber Distillery was founded by whisky lovers, with a mission to produce high-quality single malt whisky with character, using traditional methods that are rarely seen today.
The journey begins at their single farm, where 100% of their barley is grown. It is then traditionally floor malted, hand-mashed and fermented slowly for seven days in their wooden washbacks that were hand-made at their own cooperage. They use direct fire to heat the small copper pot stills, and mature the spirit in hand-selected casks. Finally, their whisky is bottled onsite at our distillery.
Our hand-crafted approach to whisky production passionately combines traditional methods, expertise and an absolute commitment to quality.
Bimber’s first casks were laid down on the 26th May 2016 and they released their inaugural single malt whisky (The First) three years later in September of 2019 – the limited release of 1,000 hand numbered bottles sold out in 3 hours. Bimber will be releasing a wide range of new single malt whiskies – all with our trademark accessible, fruit forward character – all handcrafted with passion.
Crafted in partnership with two masters of their craft, this exceptional Single Malt is made with 100% English grown barley at Bimber Distillery in West London – one of the leading lights in England’s whisky making scene. After maturing in ex-bourbon casks, the spirit is transferred to a rare fino sherry butt and shipped to the capital by renowned producer Bodegas Tradicion, Jerez.
The result? A whisky of remarkable provenance and rarity. Rich and nutty, with baked dough, green fruits and a beautiful saline minerality. This subtly sweet London whisky makes for an incredible dram, oozing individual character. Best served neat, with a drop of mineral water to open the full spectrum of aromas and flavours, and paired with dark chocolate truffles, cigars and good company.
