For its tenth edition, this Boulet de canon is hitting hard! BOOM! Resulting from the ageing of their usual Boulet de canon blend (Nicaragua and Panama) in Six Quarter casks (quarter casks of a Butt = 125 Litres) from a very famous Islay distillery.
These casks underwent the same smoking process as did the Boulet de canon N°5 casks. Indeed, they sent these 6 casks to be smoked in a Tuyé (Jura Morteau sausage smokehouse) for 2 months before pouring the rum for a 6- month finish in the closed barrels.
The first man to distill rum in these green and pleasant fields, Dr John’s English Spirit Distilleries in Essex and Cornwall - historic homes of rum-soaked smugglers and pirates - has created a great British rum worthy of any adventure, and has done so with new techniques and never-before-attempted processes that the establishment will balk at.
COLOUR: Golden with brown hues.
NOSE: Grilled meat, pepper, and cumin. If you close your eyes, the fragrance evokes bacon dipped in BBQ sauce with a hint of balsamic vinegar. It also has wood-fire smoky notes and the richness of a delicious churned butter.
TASTE: Full-bodied, the palate is straightaway full of this silky-smooth impression you get from biting into BBQ ribs. Then some peppery notes give way to those delicious aromas of hazelnut typical of those from the best matured meats.
FINISH: Dominated by a delicate smokiness, ever so slightly iodised highlighted by clover and pepper. It’s mouth-watering and addictive.
