Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farm’s quiet periods; mid-summer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky.

Distilled from clear wort during the winter of 2006 with a slow distillation regime, very high and narrow cut points we collect the lightest most delicate flavours from our barley malt.

This winter release contains whisky from 6 first fill Bourbon barrels. Cask 080/2006, 081/2006, 082/2006, 083/2006, 085/2006 which were filled on 16th December 2006.

TASTING NOTES: Daftmill’s Winter Batch Release opens with comforting aromas of stewed rhubarb and custard on the nose, with delicate notes of freshly baked bread, grains and dried coconut. With a little time in the glass, waves of fresh apple and pear emerge, mingling with vanilla spice. The palate offers notes of stewed fruits and Victoria sponge, with a more complex edge developing – with lemon zest and a slight grassy character. The texture is remarkably soft and creamy, integrating nicely with flavours of sponge pudding and custard. A long finish shows bags of wood spice; cinnamon, nutmeg and clove, with lingering fresh fruit and vanilla.

This product is being sold on behalf of a private client. As such no vat can be claimed back.

All our wines are stored in our importers bonded warehouse, which have the optimum environment for fine wine storage, by carefully regulating temperature, humidity and other microclimatic factors. As such, please allow between 7 and 10 days for your delivery to arrive.
