LOCATION: Beaune vineyards are the most extensive of the Côte de Beaune, between Savigny to the North, and Pommard to the South. There are no Grand Cru vineyards in this commune, but 36 Premiers Crus.
VINEYARD INFORMATION: There is little white wine in Beaune. This Beaune white is a blend of two vineyards: one of them is located underneath the Premier Cru Bressandes on top of the Beaune hill, the other one is produced from a vineyard at the foot of the hill close to a water source.
This wine is full bodied and ages very well.
Climat, next to "Les Combettes", benefits from the same soil.
VINIFICATION AND MATURATION: Grapes are harvested by hand and put in small cases in order not to damage the fruits. Grapes are pressed softly, they ferment in oak barrels produced by our cooperage. 1/3 are new barrels. Aging usually lasts 15 months on fine lies before bottling.
SERVING TIP: Mixed salads, soja salad, vegetable tempura, seafood , sushis, nems, cheviche, salmon tartar, vegetarian cuisine : vegetable tart, fennel, zucchini fritters, vegetable gratin, wok noodles, vegan burger, fish & chips, chicken yakitori, escargots, oeuf en meurette, frog legs with parsley, goat cheese.
