The wine is a bit wild, 90% from clay and 10% sand (while La Vizcaína is mostly sand). It fermented with 100% full clusters in a chestnut vat with indigenous yeasts. This north part of the vineyard produced only two barrels, and the barrels were well-seasoned to avoid oak in the wine. This is a powerful wine that is going to need time. It opens up nicely with time in the glass.
Raúl Pérez has purchased 90% of the vineyards used for the La Vizcaína project, which gives him a lot more control over viticulture. They produce around 300,000 bottles, 60% of them Ultreia Saint Jacques.
