This exceptional Whisky has matured for a full 21 years in an ex-bourbon hogshead cask. Its triple distillation process results in a spirit that is noticeably lighter and softer compared to its double distilled counterpart. The absence of peat in the production allows the more delicate and nuanced flavours to come forward and express themselves with clarity.
The initial impression is one of remarkable freshness and sweetness, evocative of the aromas found in late summer. On the nose, juicy nashi pear emerges alongside the scent of freshly peeled, slightly green banana. As the whisky opens up, the sweetness evolves, becoming more refined and taking on a nutty character reminiscent of pistachio cannoli paired with a sweet white wine.
Upon tasting, the whisky begins with a profile similar to that of a full-bodied pinot grigio, while also introducing the refreshing taste of fresh sugarcane juice accented with a twist of lime. This combination brings a lively and invigorating start to the palate.
The flavour journey continues as notes of light almond-flour cake, drenched in mandarin orange syrup, take centre stage. These sweet flavours recede gracefully, giving way to lingering hints of egg custard rolls and the delicate aroma of lemon blossom. The experience is marked by a sudden burst of intensity, which then gently transitions into a long, mellow finish of subtle sweetness.
