A citrus palate with bright acidity and creamy lees.

VINEYARDS: Alluvial, sandy-clayey, with layers of gravel covered with calcium carbonate variable depth.

VINTAGE: The 2023 vintage was warm and very dry, which gave us excellent health and quality in the grapes. It is a year that is also characterized by lower yields, due to the frost in the spring of 2022. Knowing the particularities of each place in the vineyards allowed us to define the harvest time for each area very precisely, always in search of freshness, the expression of place and avoiding over ripeness.

WINEMAKING: The grapes were direct pressed. Fermented with native yeasts in concrete vessels, without malolactic fermentation. Aged in concrete and 500L French oak barrels.

“The 2023 Chardonnay Fósil is a statement of intent—a vineyard planted in San Pablo with the aim of producing great wine. Ever since its first release, the 2016 vintage, Fósil has quickly established itself as a high-altitude white with a refreshing, non-ripe profile. Even in a warm vintage like 2023, the Chardonnay Fósil offers herbal and reductive notes, with hints of huacatay (a native Andean herb) alongside lime and lemon, all set against a soft backdrop of linden blossom. Lean and vibrant, the palate is pure and chalky in texture, flowing with a light, compact feel. “Fósil is a brilliant, concrete-fermented and aged Chardonnay from ten-year-old vines in San Pablo. First produced in 2016, it’s a wonderfully focused, chiselled white showing impressive transparency and purity, flavours of lemongrass and tangerine, stony minerality and a thrilling finish. 2025-30"95 points, Tim Atkin, June 2024.

“The 2023 Fósil hails from two vineyards in San Pablo and was vinified entirely in concrete without malolactic fermentation. Opening with a pure, citrus-driven nose padded with an elegantly creamy richness, the palate balances a broad, textural breadth with a gently electric spine of acidity that carries through the herbal, lifted finish.
