METHOD OF PRODUCTION
Appleton Estate has as its main point the constant search for quality throughout the entire production process. Ten different types of sugar cane are distilled to obtain the right complexity; the yeasts are natural and come from the plantation; the water is taken and filtered directly from the limestone hills of the area. For distillation, discontinuous and column stills are used. The quality is also guaranteed during aging, for which ex-bourbon American oak barrels are used. Furthermore, all aged rums must comply with the 'Minimum Aging' standards, that is to say that the rum blends used respect the number of years of aging reported in the bottle, without exclusions.
Joy Spence, the first woman in the world of spirits to take care of the blending, holds the role of Master Blender.
