
Cherubino Pemberton Chardonnay 2023.
A delicate structure to this lightly-oaked wine allows the gentle intensity to shine. Beautifully balanced and fine with a seamless palate and a very long finish. Thoroughly modern in style, with complexity, grace and a silky mouthfeel.
VINEYARDS: Various soils.
VINTAGE: The Pemberton region experienced similar conditions to Margaret River, with excellent winter rains followed by extended periods of cool and dry weather. This allowed for grapes to ripen steadily and with excellent balance and depth, particularly in the standout Chardonnay.
WINEMAKING: The fruit was hand-picked and whole-bunch pressed directly into oak. Natural yeasts were used, in new and used French oak barrels. The wine was rested on lees with minimal preservatives added 8 months prior to bottling.
