Cherubino Pemberton Sauvignon Blanc 2022 is made in a traditional Bordeaux style. Its bouquet brings together nettle, mineral and blackcurrant notes with oak-infused spice, while a long, fine line of acidity carries the wine through to an extended finish.
The fruit was harvested at night, then gently de-stemmed and sorted to select the best berries. Natural yeasts were employed for a long, cool fermentation at 10–12°C in new French oak, a process that adds layers of flavour and complexity.
The 2022 growing season began with a mild, wet spring, followed by dry and warm conditions through late spring and summer ahead of Christmas. Pinot and Chardonnay grapes were harvested in March and April, and the season produced wines with generous fruit flavours and fresh acidities.
