The blend includes Chouilly, Le Mesnil-sur-Oger, Avize, Cramant, Villeneuve, and Tr?pail. These Chardonnay terroirs bring elegance, citrus brightness, mineral tension and aromatic refinement. The cuvee is designed to express the purity and freshness of great Champagne Chardonnay in its youth, while retaining the structure for further development.
VINIFICATION: Harvest took place at the end of August 2020, and the wine was bottled on 24 June 2021. Malolactic fermentation is completed, giving balance and texture. The wine receives a minimum of five years? cellar ageing, allowing its fine mousse, citrus fruit and mineral framework to integrate. A dosage of 6.5g/l supports harmony while preserving the lively tension of the Chardonnay.
VINTAGE: The 2020 vintage was exceptionally mild and early, with harvest beginning at the end of August. The Chardonnays reached maturity slightly later, under perfect sanitary conditions. The grapes showed outstanding ripeness, high concentration and remarkable natural balance. This created a Blanc de Blancs with both generosity and freshness, combining ripe citrus character with the mineral precision expected from top Chardonnay terroirs.
TASTING NOTE: Pale gold in colour, with silvery highlights and fine, regular effervescence. The nose is delicate and floral, showing white flowers and jasmine blossom, lifted by orange, pomelo and subtle white pepper. The palate opens clean and lively, with fine tension, elegant citrus concentration and a velvety texture that builds through the tasting. The finish is vibrant, saline and mineral, with a refined chalky edge.
FOOD PAIRING: Pair with citrus scallop ceviche, sea bass, turbot with beurre blanc, oysters, crab, langoustines, sushi, fresh cheeses or delicate seafood dishes.
