M.Chapoutier Bila-Haut Occultum Lapidem Blanc 2018.
It was in Latour de France that Michel Chapoutier chose to set up his domain. The vines of Bila-Haut and Occultum Lapidem were the first expressions of this terroir. Then there followed 6 years of reflexion, observation and analysis to produce a precious, rare wine: v.i.t. The story continued near a little village called Lesquerde. Steep, craggy limestone, arid soil, battered by the tramontane wind… A wine wriggled free from the grasp of nature: L’esquerda. Eventually, Single Vineyard Selections r.i. and Chrysopée were able to reveal new nuances of this precious terroir.
SOIL: The grapes are from Latour de France composed of gneiss.
VINIFICATION: After pressing, we carry out a natural cold static settling at 10°C. Fermentation is carried out at 18°C, 70% in stainless steel vats and 30% in "demi-muids" (600L barrels).
AGEING: 9 months, 70% in stainless steel vats and 30% in "demi-muids" (mainly new) with "batônnage" (stirring of the lees).
APPEARANCE: lovely golden hue.NOSE: Stone fruit aromas (apricot, peach), a delicately roasted floral touch, minerality and complexity.
PALATE: Lovely and fresh on entry, full of minerality and complexity. Well-balanced wine thanks to the freshness and the fat of the white Grenache. Notes of white flesh fruits with hints of vanilla.
