M.Chapoutier Bila-Haut Occultum Lapidem Rouge 2018.
It was in Latour de France that Michel Chapoutier chose to set up his domain. The vines of Bila-Haut and Occultum Lapidem were the first expressions of this terroir. Then there followed 6 years of reflexion, observation and analysis to produce a precious, rare wine: v.i.t. The story continued near a little village called Lesquerde. Steep, craggy limestone, arid soil, battered by the tramontane wind… A wine wriggled free from the grasp of nature: L’esquerda. Eventually, Single Vineyard Selections r.i. and Chrysopée were able to reveal new nuances of this precious terroir.
SOIL: The vineyard is located on Gneiss and schistous soils from the Devonian Period and limestone from Kimmeridgian Period.
VINIFICATION: 100% destemmed. Extraction is only carried out by punching of the cap during a long maceration (at least four weeks).
AGEING: About a half matured in vats and the other half is aged in casks according to the vintage.
APPEARANCE: great dark garnet-red.
NOSE: the first nose is quite closed with a dominant of graphitic, leather, and then intense aromas of pepper, black fruits and scrubs.
PALATE: the attack is rich, dense. Then the wine is fleshy and solar. The final is sappy served by delicate tannins and a great freshness.
