VINEYARD INFORMATION: The vineyard Combe aux Moines is situated at the north of Combe de Lavaux, next to the Premier Cru Cazetiers. It faces the south on a both chalky and clayey soil.
VINIFICATION AND MATURATION: Destemmed grapes ferment in vats during 3 to 4 weeks. Aging takes place in oak barrels produced by the CADUS cooperage during 18 months.
WINE SERVING TEMPERATURE: 16-17.
AGING POTENTIAL: 20 years and more.
